Honest Burgers reveals latest collaboration

Honest Burgers has joined forces with Budgie Montoya of Sarap BAon to bring the limited-edition FILIPINO burger to all Honest restaurants from 10 Augusut until 6 September.

The FILIPINO tops Honest beef with sweet cure bacon, The Curators Pork Puffs, double American cheese, Sarap burger sauce (made with banana ketchup), 'atchara' pickled slaw and lettuce.

The burger combines all the components of a classic American bacon cheeseburger with distinctly Filipino flavours, and is served with Honest's homemade rosemary salted chips.

Honest and Montoya have also worked with British snack producer The Curators to create bespoke packets of Pork Puffs, complete with custom bags featuring artwork from British-Filipino artist Kim Westwood.

There's also a Filipino cocktail on the menu for the duration of the collaboration, which mixes Don Papa Rum, Gingerella ginger ale mint and lemon with calamansi juice for a Filipino take on a classic rum and ginger serve.

A crash course in Filipino cooking

"Budgie's given me a crash course in Filipino cooking and food culture this summer," says Adam Layton, head of collaboration at Honest Burgers. 

"His pulatan (a succession of snacking dishes designed to sustain a few cold drinks) at Sarap BAon are among the world's best bar snacks. The sour-salty-sweet flavours of the Philippines are easily translated into a simple bacon cheeseburger format, and ultimately that's what this is." 

"I believe Filipino food doesn't need elevating, it needs championing," adds Montaya. "We want to show everyone how accessible and delicious Filipino food is.

"The collab with our Brixton neighbours Honest started when we added a few Sarap ingredients to our pre-shift burgers.

"It was a hit with the team: the sweetness of burger sauce (we add banana ketchup) contrasts with the sharpness of our atchara pickled slaw and the salty crispy Pork Puffs are a nod to our signature lechon dish of slow roasted pork belly and crackling."
