Pappy's Taco Bar coming to Cumbria

This spring will see the launch of Pappy's Taco Bar in Cumbria. 

Part of the Pappy's Texas Barbeque family, the Tex-Mex restaurant will blend southern hospitality with mexican flavours to offer a menu packed full of Texan tastes, tacos and tequila. 

Sharing-style dishes will use hand-smoked, Texas barbequed meat from Pappy's Smokehouse, encased in traditional soft corn tortillas and served with a selection of sipping tequilas, Mexican beers, margaritas, cocktails and imported Mexican sodas. 

Third-generation Texan pitmaster, Robin Perris – who currently runs Pappy's Smokehouse Bar & Grill (an outdoor Texas courtyard during the summer months), Pappy's Texan Takeout and Pappy's at Home meal kits – will open the Cumbria branch. Born and raised in a Texan BBQ-belt town close to the Mexican border, Perris is well-versed in the textures and flavours of Tex-Mex cuisine. 

Using a custom Texas smoker built in the likeness of her father 'Pappy's' commercial pit, Perris will oak-smoke locally-sourced Cumbrian meats and authentic USDA black Angus brisket by hand to provide the taco fillings. Mexicana accompaniments such as coriander, avocado, lime, fresh slaws and salsas and smoky chipotle will also be used. 

Signature dishes include carnitas tacos with slow-cooked smoked pork in spices and juices, topped with pico de gallo and lime wedges, served on a soft corn tortilla; oak-smoked brisket tacos with red cabbage slaw and salsa verde on a corn tortilla; and traditional Mexican birria taco with USDA black Angus brisket in a stew, served with beef consomme for dipping. 

Alongside the tacos, the menu will serve totapas, a seven layer Tex-Mex dip, fresh seasonal salsas and desserts such as churros and a Mexican affogato.

"After living in Cumbria for 16 years, in 2013, I thought it was time to set up Pappy’s Texas Barbeque, inspired by my father’s own Texas barbeque business back home, with the hope of bringing some Texas charm and sunshine to the often grey and drizzly Lake District," says Perris.

"Opening Pappy’s Taco Bar is the natural next step for us and a very exciting chapter for the Pappy’s family."
