Da Terra launches chef's table experience
Chef Rafael Cagali will introduce a new chef's table experience to his two Michelin-starred restaurant Da Terra.
Na Mesa will serve as an extension of the Bethnal Green restaurant, housed within the Town Hall Hotel. Through an explorative tasting menu, Na Mesa will take diners on a culinary journey inspired by the chef's Brazilian-Italian heritage.
It is Da Terra's debut chef's table, occupying a private dining room with an adjoining bedroom that guests can reserve for the night.
Na Mesa, which translates from Portuguese to "on the table", reflects chef Cagali's playful and intricate cooking style. Every course, produced in the restaurant's central open kitchen, offers a personal and original insight into the philosophy that underpins Da Terra. Dishes include sourdough with bone marrow, a trio of cultured butter and Gonnelli 1585 Olive Oil; middle white pork, morel feijoada, endive and cavolo nero; moqueca with aged turbot, manteiguinha beans and farofa; and baba cachaça, pistachio and N25 Reserve Caviar.
The menu will be accompanied by a selection of wines or homemade soft pairings that revitalise surplus ingredients from the kitchen, chosen by head sommelier Maria Boumpa. A selection of Champagne cuvées and digestive from Da Terra's cellar will also be available.
The space will be decorated with exclusively curated art pieces. As Cagali's tribute to his homeland, the chef's table experience will build on Da Terra's signature offering of exceptional dining and immersive storytelling.
