BIG NATH’S WINNING DISH

Nathan Ritchie, chef and owner of Big Nath’s BBQ in Bristol is the worthy winner of the latest H2O Street Food Championships ‘Technical Round’, an event sponsored by Florette Foodservice.

Nathan used Florette’s mixed peppers, sliced onions and Korean Gochujang Gourmet Slaw in his winning Asian Steak Burrito which stole the show. During the cooking process it looked mouthwatering, smelt delicious and lived up to its promise as an exceptional dish.

Who are you?

I’m Nathan Ritchie, one of the owners and founders of Big Nath’s BBQ, a little lockdown project that’s taken on a life of its own. Alongside my brilliant partner, Kinsey, we’ve been serving up smoky goodness in Bristol. We specialise in street food, private events, and even run a BBQ school.

How did you come up with your SFC technical dish?

It all started with Florette’s Gochujang Slaw. I’m a bit of a flavour magpie, always picking up bold tastes from different cuisines, and this one just clicked. I wanted to blend the punchy, spicy flavours of Asia with the comfort-food vibes of Tex-Mex. Think smoky, crunchy, tangy perfection—well, that’s the aim, anyway!

How did you find working with Florette Foodservice ingredients?

Having used Florette Salads for a long time at home it was easy to integrate them into a dish. I found it great - everything was fresh, prepared and flavour profiles were on point, it's great to see the products available in foodservice channels.

Do you incorporate fresh ingredients regularly in your cooking?

Always. Fresh ingredients are the lifeblood of a BBQ—or any good cooking, really. They keep the dishes vibrant, the flavours popping, and the customers happy.
