Rudy's continues UK expansion with Brighton pizzeria
Rudy’s Pizza Napoletana, the Manchester-born pizza group, is coming to the South Coast, opening a new pizzeria in Brighton this spring.
Bringing its authentic Neapolitan pizzas to the seaside city, the new restaurant will serve soft, fresh dough pizzas using ingredients from Naples, cooked in just 60 seconds.
Occupying the former Chilli Pickle site on Jubilee Square in the heart of Brighton’s North Laine, the new restaurant will feature Rudy’s signature minimalist and industrial-style decor in a spacious 3,500 sq ft unit with approximately 160 covers.
Since launching in 2015 in Ancoats, Manchester, Rudy’s quickly gained a following for its authentic Neapolitan dough and quality ingredients. Having taken on London, with pizzerias in Soho, Tottenham Court Road, Spitalfields and Shoreditch, the new opening will mark the brand’s 31st pizzeria nationwide.
Rudy’s Brighton will also bring opportunities for recruitment across 30 positions, with a particular focus on manager and highly skilled pizzaiolo roles. The employer recently launched its dedicated Rudy’s pizzaiolo academy to teach both experienced chefs and first-time pizzaioli the Rudy’s classic Neapolitan style. The team will be holding recruitment days for both full- or part-time positions closer to the opening date.
Dining at Rudy's Brighton
The venue will serve classic recipes such as marinara, margherita and calabrese – all originating from Naples, the birthplace of pizza. The restaurant will also pay homage to famous pizzerias around the globe with its rotating specials. Classic Italian desserts will be available, as well as a drinks menu featuring Italian spritzes, Italian lagers and lager from local breweries and classic stirred cocktails.
The brand's signature dough is made fresh daily using Caputo ‘00’ flour, which ferments for at least 24 hours.The dough is cooked in a Stefano Ferrara oven for around 60 seconds, resulting in a soft and light pizza with an airy and raised cornicione crust (the edge or rim of the pizza). Pizzas come topped with a variety of quality ingredients from Naples, including San Marzano tomatoes, grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.
