Bistro Freddie team announces new concept

The team behind Crispin and Bistro Freddie will launch a new restaurant concept on 30 June, bringing a brand-new dining destination to London's Westbourne Park. 

Canal, named as such for its position overlooking the Grand Union Canal, boasts a generous south-facing waterside terrace, featuring both table seating and a lounge area. The indoor restaurant will accommodate up to 70 guests and will be open for breakfast, lunch and dinner. 

The opening also marks the debut of Quality Projects – a dedicated special projects and consultancy business created by Dominic Hamdy, founder of HAM Restaurants, the group behind Crispin and Bistro Freddie. It will focus on collaborations around innovative hospitality concepts across the city, with its first partnership underway with Mason & Fifth and more in development. 

Dining at Canal

General manager Sean Cooper, who has worked at The Fat Duck, Cafe Murano, Quality Chop House and Muse by Tom Aikens, will oversee the front-of-house, while the kitchen will be led by New York-born chef Adrian Hernandez Farina, whose experience includes Humo, Luca, Coal Rooms, ASKA (New York) and The French Laundry. 

Guests can expect polenta flatbreads with seasonal butters, alongside snacks such as Coombeshead Farm ham and Portland crab doughnuts. Starters include Trombetta courgette with stracciatella and pangrattato, and Seabream crudo with burnt blood orange and chilli.

Larger plates will feature ricotta agnolotti with cavolo nero and pecorino, and red mullet with bouillabaisse, mussels and Mangalitza sausage, plus sharing options like the Cornish John dory with lemon dill butter and monksbeard, and Jersey sirloin with brown butter jus, béarnaise and potatoes, served up feasting-style alongside a selection of sides.

Cocktails will be available on tap, while the wine list will showcase a balance of classic regions and progressive producers.
