New restaurant set to launch at Mallory Court

A new restaurant will launch at Mallory Court Country House Hotel & Spa, Leamington Spa, on 18 June. 

Led by chef Stu Deeley, The Warwick will offer a menu focused on bold, seasonal flavours, all served within the hotel's historic setting.

The launch marks a homecoming for Deeley, who worked at Mallory Court and the Eden Hotel Collection early in his career. Originally from Birmingham, he gained recognition for winning MasterChef: The Professionals in 2019, following years perfecting his craft in Midlands kitchens such as Simpsons, The Wilderness and Malory Court. He later became chef-direct at Hampton Manor Estate, where he founded the Michelin-recommended Smoke.

Deeley's seasonal menu will use produce from the Mallory Court Kitchen Gardens. The five-course Taste of the Season offering is priced at £105 pp, with a three-course option available for £99 pp. 

Highlights include Cornish crab with Isle of White tomatoes, poussin with Asian influences and jamón sauce, pea and mint gazpacho paired with burrata and globe artichoke, and baked Alaska.

"Coming back to Mallory Court feels like a full-circle moment for me," says Deeley. "It's a place with deep roots, not just in its history and gardens, but in the people, many of whom have been here for decades.

"What really excites me is the potential," he adds. "We have a bigger blueprint than I've ever had before, and that opens the door to creating something truly special."
