Adam Byatt's new British brasserie menu revealed

Brasserie Constance, created by chef Adam Byatt, opens on 15 July, offering brasserie dining inspired by British cuisine.
Nestled on the banks of the Thames on the first floor of the newly opened riverside development, Fulham Pier, the menu at Brasserie Constance is rooted in simple, British seasonal ingredients.
The venue is inspired by its namesake, Constance Spry, the trailblazing florist and chef who once worked nearby at Fulham Pottery. The brasserie's handmade ceramics act as a tribute to the Thames, to regional craft traditions and Spry's pioneering style.
Brasserie Constance joins Byatt's restaurant portfolio, which includes the Michelin-starred Trinity, Bistro Union and Charlie's at Brown's Hotel. Byatt also co-owns Wildflowers, located in Belgravia.

Guests can ease into their visit with a selection of miniature classic cocktails, including a martini, a Negroni and a traditional G&T, served alongside bites such as smoked haddock croquettes, English pea and mint tartlets, and steak and ale skewers.
Starters include potted duck with rosehip jelly, London smoked salmon served from the trolley, and braised leeks vinaigrette. Generous sharing dishes such as thick-clay pot chicken barley and beer, and a crusted rack of lamb, are also available. A daily changing selection of comfort-led specials will be available, including pie and mash, and toad in the hole.
Spry's spirit is captured in several dishes, including the Coronation Chicken Pâté en Croûte, inspired by her involvement in the creation of the original Coronation Chicken.
Other highlights include a raw beef with tomato and rye crouton salad, a selection of omelettes with Cromer crab and chive, and the omelette soufflé with girolles. Shellfish is also celebrated through such dishes as Cooley Gold Oysters 'Rockefeller' and scallops from Orkney.
Desserts bring an air of nostalgia with a towering yet light baked Alaska (served tableside), a trifle of the day, and English strawberries and cream.
Brasserie Constance is led by head chef Charlie Crote, who works side-by-side with Byatt. Beginning his culinary career under the tutelage of John Williams at The Ritz, Crote went on to work with Patrick Powell, supporting the opening of Allegra in Stratford and, latterly, its sister restaurant in the capital, The Midland Grand Dining Room.
Flo, the accompanying riverside cocktail bar, will offer a short menu of small plates and a wine list curated by Byatt's son, Jack, sommelier at Trinity in Clapham.
