Brewski to serve up new Quayside concept
Peel Retail & Leisure has announced that the creators of Manchester restaurant brands Brewski and American Pies are set to launch a new concept, Big Tray BBQ, at Quayside this autumn.
Spanning 5,235 sq ft and inspired by Brewski’s ongoing culinary tour of the United States, Big Tray BBQ will bring a bold, counter-service smokehouse to Quayside, serving up BBQ by weight, homemade sides and standout sauces. The restaurant will bring classic Texas techniques alongside ‘Nu Skool’ cutting-edge smoked meats and flavours.
With smoke and spice at the heart of the new concept, customers can expect Brewski’s crowd-pleasing portions with a twist. As well as counter-side carving, new dishes include 16-hour brisket, hot honey jalapeño cornbread and loaded trays of jerk chicken sausage, smoked birria lamb shanks and ribs.
