Trullo MD to open first solo restaurant

The managing director of Trullo, one of London's most celebrated restaurants, will open his first solo venture next year.

Conor Gadd, chef co-owner of Trullo, will open the doors to Burro in Covent Garden’s Floral Court early 2026.

The chef says Burro will offer "honest cooking and Italian dishes that celebrate its rich history and popularity the world over". 

The menu will feature Italian classics, as well as some created specially to suit the room and historic surroundings of Covent Garden.

Guests will be able to order a Bruschetta of Venetian chicken livers or Fried Artichokes with bottarga and chilli. With regards to pasta, there's a Tagliatelli Duck and Porcini ragu, as well as signature Roman Fettucine ‘Alfredo’.

Mains will range between Dover sole with caviar, Lobster ‘aqua pazza’ and a stand out Vitello al Burro. For dessert, there's Tiramisu ‘Bomboloni’ doughnuts and Almond Cake with butter and a glass of Marsala.   

Gadd joined the Trullo team as head chef shortly after it opened in 2010 and in 2022 took over as managing director.
