Evolv to open Sartoria in Liverpool Street
The Evolv Collection has announced it will open its latest Sartoria restaurant in London's Liverpool Street.
The restaurant marks the fourth site of the Italian brand originally launched by Sir Terence Conran, who opened the first Sartoria on Savile Row in 1990.
Under The Evolv Collection CEO Martin Williams (pictured), the opening of Sartoria Liverpool Street continues the expansion of Conran's original vision, following the launch of Sartoria Launceston Place in November 2025. The Liverpool Street opening is part of a pipeline of Sartoria locations launching throughout 2026.

Set to open its doors on 1 February 2026, Sartoria Liverpool Street's menu has been created collaboratively by the trio of chefs Marco Ruggiu, head chef at Sartoria Launceston Place; Davide Torro, head chef at Sartoria Savile Row; and Gianmarco Cossentino, head chef at Sartoria Battersea. The food will be showcasing their shared passion for refined Milanese cuisine and authentic Italian gastronomy.
The restaurant also features an outdoor terrace inspired by the elegance of Lake Como, complete with orange parasols and white metal seats with blue cushions – a nod to northern Italian garden dining.
Inside, a white marble bar adorned with Riva artwork anchors the space, while bright red Milan-inspired lamps sit at the bar ends. Soft green banquettes complement a dark green carpet, with traditional tile flooring beneath the bar.
