Evolv recruits Pierre Minotti as exec chef of Orrery

Chef Pierre Minotti has joined The Evolv Collection as its new executive chef of French restaurant Orrery

Minotti joins Evolv from the two-Michelin-starred Alex Dilling at Hotel Café Royal, where he has been exec chef since May 2022. The restaurant achieved its two-star status just four months after it opened. 

With Minotti at the helm, Orrery will now be focussed on achieving similar recognition from Michelin, which Evolv made no secret of when it announced the temporary closure and refurbishment of the Marylebone site in November last year.

The restaurant will reopen as 'Orrery by Pierre Minotti' in April.

An impressive CV

Minotti has worked in some of the world's most prestigious kitchens, including three-Michelin-starred Anne-Sophie Pic in Valence and Alain Ducasse at The Dorchester, as well as two-Michelin-starred Hélène Darroze at The Connaught.

His approach to cuisine is characterised by innovative dishes that honour seasonal and regional ingredients, while drawing upon his classical French training, balancing technical precision with creative expression.
