Creative Restaurant Group replaces HUMO with IGNI

Creative Restaurant Group is set to launch IGNI, a 34-cover restaurant with a 10-seater chef’s table on Mayfair’s St. George Street.

Under the direction of new executive chef Theo Clench and general manager Gaëlle Dubois, IGNI will open in place of HUMO. The business says it will be a refined evolution of fire dining, focusing on seafood and world-class produce.

IGNI will offer a "fire-touched exploration of premium seafood". The menu draws inspiration from Clench's Brighton upbringing.

Menu highlights include Ember cooked oyster, cucumber sauce, soft herb oil, fermented cucumber, nasturtium and bronze fennel; and aged turbot on brioche, charred lettuce, smoked bone caramel, teriyaki turbot fins. There will also be a dish based around sustainable bluefin tuna, showcasing three different parts of the fish including; Aged Tuna Hutoro, Foie Gras, Shiso and Wasabi; Tartlet of Akami with lapsang ponzu jelly; and Chiai Parfait, red pepper and 25yr old Pedro Jimenez.

Clench and team have hand-selected crockery from independent artisans in Spain and Japan, and co-designed bespoke woodwork and cutlery in partnership with Theo’s friend and designer Raw Materials Inc.
