Malmaison to bring SORA concept to Brighton
Hotel group Malmaison will launch its Japanese dining concept SORA at Malmaison Brighton Marina this May as a limited-time summer pop-up, marking the brand’s third UK site and latest step in its F&B concept rollout.
Running from 20 May to 31 August 2026, the pop-up will introduce a sushi and robata-led dining offer to the Brighton property.
SORA was first introduced at Malmaison York, before expanding to Manchester Deansgate, where it offers its combination of Japanese-inspired dishes, cocktails and a more social, experience-led format.
"SORA is designed as a flexible, scalable concept that combines strong food credentials with a more social style of dining," says Craig Robson, food and beverage director at Malmaison and Hotel du Vin. "The Brighton launch allows us to build on the success of York and Manchester, while adapting the offer to suit the location, particularly through the addition of the barbecue and outdoor dining element for the summer."
What's on the menu?
The concept centres around sushi, sashimi and robata grill cooking, alongside a menu designed for sharing. In Brighton, this will be complemented by an al fresco barbecue offering.
The offer is structured to operate across day-to-night trading, with Bento Box lunches, a Japanese inspired afternoon tea and a more premium evening menu, featuring cocktails and a late-night programme including DJs and live music.
"Brighton has a strong and competitive food and drink scene, and SORA gives us the opportunity to introduce a more differentiated, evening-led offer at the marina," adds Nick Bosse, general manager of Malmaison Brighton. "It allows us to broaden our appeal, increase footfall and create a space that works across multiple occasions, from early dinners through to late-night trade."
