The Manor House reopens following refurb

Michelin-star restaurant Bybrook, located at The Manor House in the Cotswold village of Castle Combe, is now open following a complete refurbishment.

The Manor House is a 14th century luxury hotel with an 18-hole golf course and 12th century pub, set upon 365 acres of countryside. The restaurant reopened on Valentine’s Day (14 February) and features a new interior design aesthetic created by Trevillion, known for its previous revamps of Foxhill Manor, Dormy House, Belmond Le Manoir aux Quat’Saisons and more.

The makeover brings a more modern feel to Bybrook, with design influences inspired by the kitchen garden and Bybrook river. 

Along with the refresh comes some new dishes from executive chef Rob Potter and his team, influenced by the seasons and inspired by British produce, local farms and the kitchen garden. New menu highlights include Salcombe crab with blood orange and grapefruit; salt-aged duck with liver, morel and beetroot; and apple with almond, Neston Park honey and Madagascan vanilla. 

Private dining has also been part of the refurb, with The Saxon Room offering a private dining space for up to 12 people. There is also The Brook, a semi-private area of the restaurant that can seat up to 40 guests. Additionally, the restaurant extends out to an updated outdoor area, which will open just in time for Easter.
