Lima team to launch new concept

Gabriel and Jose Luis Gonzalez, the founders of Michelin-starred Peruvian restaurant Lima, have announced the end of sister site Floral by Lima, with a brand new concept on the way.

The new Lima Cantina will aim to bring a modern twist to traditional cuisine in a more convivial, vibrant space while retaining the core ethos of quality, accessible Peruvian fare.

It will replace Floral, as well as the operator's Lost Alpaca bar, this September, after a full restaurant and kitchen renovation. The renovation will introduce a new bar to the upstairs area, with increased space for dining between the two floors.

The duo recently celebrated 10 years of their flagship restaurant Lima in Fitzrovia.

The new menu

The centrepiece of the new menu will be the ‘Pollo a La Brasa’ Peruvian rotisserie chicken, a national dish, perhaps lesser known in the UK, yet more popular than ceviche.

Whole chickens will be cooked in a newly installed ‘rotombo’, a classic Peruvian charcoal-rotisserie oven, with a unique design which allows the smoke to directly penetrate the meat, while leaving the skin crispy.

The rest of the menu will continue to feature an array of Peruvian classics, divided between sharing plates like the classic Sea Bream Ceviche & Prawn Causa Nigiri, as well as the addition of a new charcoal grill (barbacoa) section, which will include dishes such as the Aji Panca BBQ Pork Ribs.
