Las Iguanas preps for Bolton launch

A South American-inspired restaurant group is set to open a new site in Bolton on 18 May. 

The Big Table Group-owned brand Las Iguanas is bringing its cantina concept and 241 signature cocktails to Middlebrook, the UK's biggest retail and leisure park. 

The restaurant will take over a site formerly held by Chiquito, offering 183 indoor seats and an additional 66 outside. Las Iguanas Bolton will join over 60 other high street names, restaurants and leisure facilities, with over 12.5 million people visiting Middlebrook each year.

Guests of the Bolton restaurant will be able to tuck into the brand's take on the flavours and Mexico, as well as food specialities from other South American nations. They will also be able to enjoy bottomless brunches, specialist cocktails and Mexican street food culture.
