Mac & Wild founders develop food hall concept

Founders of Scottish restaurant business Mac & Wild – Andy Waugh and Calum Mackinnon – have developed a new food hall concept called Bonnie & Wild, which has been signed as the new anchor food and beverage venue at the centre of the Edinburgh St James development.

Bonnie & Wild will be centred on level four of the development, demonstrating quality Scottish produce and hospitality, with visitors able to taste flights of whisky, see salmon carved and experience Highland stalking in ‘Smoky Barrels’, Mac & Wild’s virtual shooting range.

The 16,700 sq ft food hall (the largest single F&B site in Scotland) will showcase restaurant operators alongside fresh and packaged food and drink from a variety of artisan butchers, fishmongers, grocers, cheesemongers, chocolatiers and bakeries, as well as three unique bar concepts.

“Edinburgh St James is the perfect location to launch Bonnie & Wild,” comments Waugh.

“We love the fact that it is rooted in its community but has a global outlook.

“Our vision is to bring the best of Scottish produce to the local community as well as visitors from further afield, and we are so excited to create a platform for some of Scotland’s most interesting traders.

“We cannot wait to share more details about our plans and the traders we will be working with.

“And yes, we will be bringing our award-winning VeniMoo burgers.”
