The Dairy finds new home in Bermondsey

The Dairy, Robin and Sarah Gill’s neighbourhood restaurant that operated from Clapham Old Town for seven years, will reopen on 10 September at a new location in Bermondsey’s Bermonds Locke.

Serving dishes showcasing British produce, the kitchen team uses pickling, fermenting and smoking across a menu of simple bistro dishes.

Located near the historic riverside street of Shad Thames, as well as Maltby Street Market and Borough Market, The Dairy Bermondsey will follow much of the same produce-led focus as its predecessor.

The new menu includes Willie’s mackerel, dilled fresh gherkins, sea purslane, dashi; grilled radicchio, broad bean puree, pickled Tropea onions; and wood-roasted lamb, hayonnaise, charred lettuce, mint oil.

Classic Dairy dishes will also make a return, such as the truffled Baron Bigod, fig and walnut toast with rooftop honey; chicken liver mousse and rhubarb jam; and salted caramel, malt barley ice cream and cacao.

The Dairy Bermondsey will continue Robin’s ethos of using seasonal produce, working with his close network of suppliers and a wine list that will continue to focus on natural wines and small producers.

A new home

“As many know closing the original Clapham site of The Dairy was a very difficult decision for me and Sarah, but finding a brilliant site so quickly means we are able to retain our staff and bring them over to Bermondsey, which is such a relief,” says Robin.

“The Dairy was and will always be a family-run restaurant led by nature and our journey began in Clapham in 2012.

“Our goal was to create an experience as close to dinning by a farm or coastline in central London with direct relationships to our beloved purveyors from the land and sea.

“This has developed over the years and while we have moved to our new home in Bermondsey our aim remains the same which is to be the heart and soul of the neighbourhood, creating great memories, or memory loss, whatever the case may be.

“We’re looking forward to welcoming back our regulars that have become great friends and making many more along the way.”

The Dairy Bermondsey’s interiors feature repurposed materials inspired by the southern Californian destinations Joshua Tree and the Mojave Desert, with suspended planters hanging overhead and an abundance of cacti.

Guests to The Dairy Bermondsey will be greeted by a central island bar encased with concrete columns surrounded by a series of high tables with short-backed stools.

The restaurant has also championed fellow chefs and restaurateurs through a range of events in the past, including the Bloodshot Supper Clubs – a series of exclusive midnight feasts.
