Wood & Water opening in Brixton

Wood & Water will open in Brixton this month, launched by April Jackson, former Miss Jamaica and founder of the Three Little Birds (TLB) restaurant.

Jackson's new eatery will open on Coldharbour Lane on 25 November, taking over TLB's former site with a brand-new culinary concept. Wood & Water – named after the native Jamaican word 'Xaymaca', meaning 'the land of wood & water' – will offer contemporary British food with a Jamaican twist, serving daily dinner and drinks, and bottomless brunch at weekends.

Creating the dishes herself, Jackson is inspired by her Jamaican heritage, as well as her time spent living in France and New York. Menu highlights include pan seared duck breast with jerk glaze, roasted sweet potato puree, wilted greens, rum-soaked plums and toasted hazelnuts; potato croquettes with goat curry and plantain ketchup; and roasted cauliflower with beetroot hummus, pomegranate and tamarind sauce.

Jackson's partner, Lee Tran, heads up the restaurants drinks offering, drawing on 20 years of hospitality experience to create a sweet and spicy cocktail menu that celebrates Jamaican roots. His creations include the St. Elizabeth Martini, made with Porters Tropical Old Tom Gin, pineapple liqeur, acid blend and herb oil; and a Pimento Old Fashioned made with Plantation 5yr Barbados, pimento and chocolate.

"After a hard year, it is time to go back to the reason I started six years ago, which was to share my love for Jamaica through food, rum cocktails and warm hospitality," said Jackson. "Brixton is still changing and we are eager to change with it. I am excited to serve small plates that have familiar ingredients alongside some less familiar Jamaican elements, in a newly renovated space, with an interesting collection of rums and an energy that keeps you wanting more."
