Japanese fusion restaurant opens in Fitzrovia this month

Executive chef Padam Raj Rai is launching a new modern fusion concept next week, hot off the heels of his success at Chapel Market in Islington.

His new venue, RAI, will open in Fitzrovia on 21 January. The fine dining restaurant will offer a modern take on Japanese cuisine while showcasing unique ingredients from across the UK and the world. Chef Rai is already known for his work within London's restaurant industry, already having worked in some of the city's most prominent Japanese restaurants such as Nobu, Tsukiji and most recently Hot Stone, with two decades of experience already under his belt. 

Served omakase-style (meaning dishes are specially selected by the chef), the multi-course tasting menu will feature the highest-grade Hyōgo Prefecture Kobe and Kagoshima wagyu beef; Sanpuku, high-quality nori from Japan's Ariake Sea; Koshihikari rice and aged soy sauce; alongside British ingredients such as cave-aged Dorset cheddar, English truffle and organic British chocolate. 

The venue's décor is inspired by the Japanese philosophy of minimalism, with traditional wooden panelling, accent tiling and artwork by 18th century Japanese ukiyo-e painter Hokusai Katsushika.

Open four days a week, RAI's tasting menu is priced from £110 per person, with optional supplement courses that spotlight the signature Kobe (£65) and Nigiri (£28) also available.
