New head chef appointed at Suffolk-based hotel
The Hotel Folk have hired a new head chef to oversee the menu at The Crown at Woodbridge – one venue in the group's six-strong estate.
Sci Daniels, TV food expert and former MasterChef finalist, will lead the kitchen at The Crown. As a Suffolk native with 30 years' expeirence in the industry, Daniels has previously worked as head chef in many local, award-winning restaurants, one of which boasts four stars and AA two rosettes.
Open for all day dining, Daniels' signature dishes come with fun, tongue-in-cheek names and a photo-ready finish. The star breakfast dish, 'Eggs Seckford', is a nod to Woodbridge benefactor Thomas Seckford and includes sourdough toast topped with house-cured salmon, spinach, poached eggs, mousseling sauce and bourbon-cured bacon.
Featured on both the lunch and dinner menu is the chef's speciality burger, 'The Royale with Cheese' – a beef, bone marrow and truffle patty topped with red onion chutney, tomato, cheese and truffle mayonnaise, sandwiched between a charcoal brioche bun. This is served with The Crown's 'roast dinner' salt and sustainable chips, sourced through The Teapot Project – an initiative that helps reduce food waste.
As an ambassador of the project, The Crown will donate 50p for every portion of chips sold as a side to the charity initiative.
Those who are gluten-free and plant-based are also well catered for across menus – including dessert, where all dishes that include jelly are set using agar.
