Study reveals top bun-led street food sales drivers

Research by Americana, a Lantmännen Unibake brand, shines a light on the key sales drivers for the bun-led street food trend. 

According to the study, the number one consideration for customers ordering street dishes, including the likes of bao, bán mì and burgers, is the quality of ingredients (37%), followed by the opportunity to try something new (33%) and interesting flavour combinations (31%).

As concerns over the cost of living crisis rise and consumer purse strings tighten, leveraging current menu trends is a way for operators to stay competitive and drive profit. Street food continues to see large market growth (+85%), while burgers continue to prove popular, with 87% of consumers eating one out-of-home (OOH) at lease once a month. 

When it comes to OOH dining, the top cuisines consumers look for are:

  1. Chinese (55%)
  2. Italian (50%)
  3. Western (40%)
  4. Mexican (29%)
  5. Thai (24%)

When ordering cuisines like Chinese and Mexican, consumers are looking for a range of dishes, from burgers, to chicken-based meals, to burritos, tacos and nachos. These foods have been highlighted by consumers as the best the street food category has to offer. As such, operators should ensure they are included on their menus to retain interest.
