Sellers opens flagship restaurant at 1 Hotel Mayfair

Today marks the launch of Dovetale, the new restaurant from Tom Sellers, located at 1 Hotel Mayfair – London’s new luxury hotel located on Berkeley Square. 

Chef Sellers’ new restaurant is positioned on the corner of Piccadilly and Berkeley Street, nestled on the newly walkable Dover Yard. The restaurant offers a responsibly-sourced, produce-led à la carte menu, bolstered by dishes cooked over the grill and an abundant raw bar. 

Sellers is joined by Tom Anglesea as executive head chef of 1 Hotel Mayfair and Dovetale, as well as Chase Loveky as head chef and Andrew Blas as executive pastry chef. Director of wine Oliver Espersen oversees one of the city's most extensive wine programmes, which will feature traditional bottles alongside new world wines. 

Dovetale menu highlights include same-day made English burrata with Amardo Manni ‘oil of life’ olive oil; braised cuttlefish ‘alla Romana’; day boat caught Dover sole Veronique; roasted hardwick lamb with gem lettuce, yoghurt and wild garlic capers. Dishes from the grill include English wagyu Denver steak and turbot tranche Meunière for two to share.

An onsite butcher ages and cuts steaks in-house from the UK’s best meat suppliers. At the raw bar, a range of British shellfish will be available including Scottish hand-dived scallops and Cornish crab and sea bass, alongside classically garnished shucked oysters and N25 Oscietra caviar. 

Two centrepiece Knickerbocker Glory trollies have been collaboratively conceptualised and designed by Sellers and Seymourpowell, offering the classic nostalgic dessert to guests, made tableside. Knickerbocker Glories will be made with a host of handmade ice creams and toppings, from raspberry ripple and tutti frutti to birthday cake and mint choc chip.

Dovetale will also include an outdoor terrace with a hammered copper fireplace and pergola, plus a private dining space for intimate gatherings. The restaurant’s tableware has been collaboratively designed by Tom Sellers and Stefanie Hering of Hering Berlin, who have also developed the individual serving glasses for the Knickerbocker Glory trollies.
