Fallow team to open pop-up chicken concept

Chefs Will Murray and Jack Croft, alongside James Robson, owners of Fallow St James's Market, will open FOWL on 3 October. 

The 70-cover venue, previously a pub operated by the Cubbitt House Group, is located a stone's throw away from Fallow and will be open all day for walk-ins only. 

The chefs have created a 'beak-to-feet' menu including their interpretation of classic dishes, including cornbread, chicken and herb butter (£12); chicken liver parfait with black cherries and sourdough soldiers (£16); triple crisp hot wings with Sriracha mayo (£16); chicken Caesar salad with pickled lemon and anchovy (£16); triple crisp chicken fillet bun with cheese sauce (£16); chicken fries (£6); and chicken fat crème caramel (£8). 

Murray and Croft have worked with The Ethical Butcher and Rare Breed Meats to source the best possible pasture-raised and soy-free birds from farms that practise regenerative agriculture. 

Alongside the restaurant menu, FOWL will be collaborating with a series of celebrated chefs to create one-off dishes available for a limited time. Chef Pierre Koffmann will kick things off with the chicken leg corn dog with Aleppo pepper and 'La Grande Coque Pie' for two, featuring confit chicken hearts, livers and cockscombs. Koffmann will be closely followed by Lennie Ware, star of the Table Manners podcast, in November.

A concise cocktail menu and wine list will be available, alongside beers, including Guinness, on tap.
