Thesleff Group announces Pietro Collina as beverage director
Thesleff Group, operator of Notting Hill brands Los Mochis and Viajante87 and Sale e Pepe in Knightsbridge, has announced Pietro Collina's promotion to group beverage director from 1 December.
Following his success as bar director at Viajante87, Collina is now expanding his role to include the group's wider collection.
Having started at age 16 at the private members' bar Mark's Club, Collina eventually became beverage director at renowned New York City spots such as Eleven Madison Park and NoMad Hotel. Collina then went on to direct the bar programme at London Claridge's Davies & Brook.
Since joining Thesleff Group in August, Collina has since worked on a variety of projects across all sites. He has created standout cocktails, focusing on speciality margaritas and collaborating with high-end partners to create innovative serves. He has also been developing Los Mochis – a concept where Tokyo meets Tulum, featuring a vast collection of agave-based spirits such as tequila, mezcal, raicilla and sotol.
Now, alternating cocktails will be introduced across the group's portfolio, with Collina refreshing menus every six months to create drinks aligned with the seasons.
Collina's expanded role ties in with the planned launch of Los Mochis London in spring 2024. His work will focus on the main bar, which will boast one of the largest selections of rare tequilas and mezcals in Europe.
"I am excited to have the opportunity to expand my responsibility and oversee all beverages for Thesleff Group," he says. "We aim to create one of the most extensive beverage programmes in London, highlighting cocktails, spirits, wine and sake."
