Nico Simeone to launch elevated chippie
A Scottish restaurateur is rebranding one of his Glasgow venues this month, relaunching it as a new 'elevated chippie' concept.
Chef Nico Simeone currently owns and operates 17 restaurants in 10 UK cities, including Edinburgh, Manchester and London, with his first overseas opening landing in Dublin.
Simeone's first Six by Nico site opened in Finnieston in 2017 with the iconic 'chippie' menu. With the chef looking to return to his roots, Simeone will close the original Finnieston venue and reopen it as Sole Club on 28 February.
The site will undergo a full refurbishment following a significant investment. While it will look like a traditional takeaway chippie, behind a seemingly innocuous fridge door will be an intimate, exclusive 20-seat speakeasy-style fish restaurant.
Dishes expected to be popular include monkfish kiev, the 'ultimate' fish finger butty with fennel slaw and tartare sauce, and a lobster roll with saffron and orange emulsion and shellfish butter, as well as traditional fish and chips.
The restaurant will serve under 400 people a week – what most Six by Nico branches can accommodate in one day. There will be no walk-ins available and bookings will be released on a month-by-month basis.
Chef Simeone comments: "With everything we do, the first goal is how do we get the product and the experience to where we want to be. And then after that it's how we grow it so more people across the country can experience it. I believe in the Sole Club concept and think it can go on to follow in Six by Nico's footsteps – but first, it's about making Finnieston a success."
