NYnLON appoints new head chef

A signature restaurant located in a five-star hotel in the capital has announced the appointment of a new head chef.

Giuseppe Federico now oversees all kitchen operations at NYnLON, based at the Hyatt Regency London Blackfriars. In his new role, the native Italian aims to elevate the restaurant's culinary experience, focusing on product quality, sustainability and locally sourced ingredients.

The upscale bistro-style restaurant fuses the finest comfort food from New York and London, with Federico bringing 10 years of experience working in some of London's finest hotel kitchens – including Shangri-La Hotel at the Shard, Mandarin Oriental Hyde Park London, Andaz London Liverpool Street and Intercontinental London at the O2.

Transatlantic dishes

Federico has launched a new bistro-style menu, featuring classic transatlantic dishes such as Black Angus Beef Burger, NYnLon Hotdog, Moving Mountains Vegan Burger and Hot Smokes Salmon Bagel. Each dish is priced at £16.50pp, and guests can upgrade to a Lobster and Crayfish roll for £5.

"I'm thrilled to be joining the Hyatt Regency team in this landmark hotel," says the chef. "I'm excited to bring my passion for hospitality to life in this vibrant environment, delighting guests and crafting new culinary experiences with sustainability in mind. I look forward to leading the talented team of chefs and embarking on a new chapter of culinary excellence at NYnLON."

NYnLON opened in October 2023, offering sophisticated cooking with an everyday appeal of timeless dishes such as 35-Day Dry-aged Rib Eye Steak, Salmon Chop, Black Angus Beef Burger, Kale Caesar Salad and Mac & Cheese.
