Cabo to land in Edinburgh next month

A Pacific-fusion bar and restaurant concept is set to land in Edinburgh next month. 

Part of Bow Hospitality, Cabo will stand as the group's 12th venue overall and its first in the Scottish capital. 

Inspired by the lifestyle and culture of the party peninsula in Mexico, Cabo will bring the taste of the Pacific coast to Scotland. 

Open seven days a week from lunch until late, Cabo will take over the former Superico site at 99 Hanover Street. After several years of scoping out the ideal central location in the city, the 70-seater restaurant will offer all-day casual dining, complete with a live sushi bar. 

The Cabo experience

With a modern approach to the menu, diners will enjoy a Baja Californian fusion of Japanese and Mexican dishes, including ceviche sharing platters, soft shell tacos and 60-day dry-aged Scotch steak.

Currently undergoing a complete transformation, the venue's interiors will draw inspiration from the beachy city of Cabo San Lucas. Playful design, art, cacti, terracotta, stone accents and abstract illustrations of famous Cabo landmarks will add to the party atmosphere. 

Live DJs will be on hand Thursday–Sunday, with an extensive list of cocktails from a bespoke bar also on offer.
