SILVA coming to Mayfair in November
A new day-to-night restaurant is set to open in London's Mayfair in November.
Derived from the Latin word for 'forest', SILVA's menu will rotate in line with the seasons, taking inspiration from across the Mediterranean and Japan.
Founder Daria Grebenyuk and her team have created an elegant space in Bruton Place, a location known for its independent restaurants, retailers and galleries.
Serving breakfast, brunch, lunch and dinner, SILVA will offer 91 covers across two floors and an outdoor terrace. The restaurant is joined on the first floor by a snug bar and a private dining area, called 'The Garden Room'.

Menus reflect Grebenyuk's experience of travelling across Europe and beyond. She has worked closely with head chef Slawomir Sawicki (Eric Chavot, Galvin at La Chapelle, Arts Club) to curate menus that bring together various influences and techniques in recipes that allow seasonal produce to shine.
Breakfast options include gratinated crab and gruyère omelette, alongside eggs with house-cured salmon, pastries, coconut and muscovado porridge with caramelised banana and blackberry jam, acai bowls and soufflé pancakes with white chocolate and lavender chantilly.
The daytime menu will showcase a range of starters, raw dishes, seasonal salads, mains and desserts. Highlights will include the crispy fried egg served atop parmesan cream, potato waffle topped with beef tartare and shaved winter truffle, and baked Isle of Mull scallops with yuzu butter. From the raw section, diners can choose salmon with crunchy rice, ponzu and shisho; a line-caught sea bass crudo; or a toro and mango tartare.
Evening guests can tuck into roast duck with coco beans, fennel and orange; sea bass casserole; and sharing plates such as line-caught turbot cooked on a robata grill and served with a wakame beurre blanc; or chateaubriand with wild mushrooms. Desserts such as basque cheesecake, chocolate pavé with coffee ice cream and rum-roasted pineapple with coconut will also be available.
