New pastry chef joins team at RAILS

The Grade II-listed Great Northern Hotel in King's Cross has appointed Albio Ziu as pastry chef at the hotel's restaurant, RAILS.
Ziu joins the hotel with over 10 years of experience, having previously worked in pastry at The Bloomsbury Hotel, Searcy's Pall Mall and Firmdale Hotels Group.
Working alongside RAILS' head chef Mark Weir, Ziu will assist in developing the restaurant's dessert menu, seasonally changing afternoon tea, private dining and corporate packages for The Carriage events space.
"My role is to create exquisite desserts and pastries that elevate the dining experience," says Ziu. "As well as new seasonal dishes, I will be evolving RAILS" vegan- and gluten-free options to cater to all dietary preferences."
Jenni Lehtonen, director of sales and marketing at Great Northern Hotel, adds: "We're thrilled to introduce our new pastry chef, Albio, who brings both exceptional skill and vision to GNH. With ample experience working in respected kitchens, Albio has a refined eye for detail and deep understanding of flavour profiles. He has a passion for crafting innovative offerings and ensuring that every guest experience is memorable. Albio is a perfect fit for our team."
