Brat's Tomos Parry to welcome guest chef in May

On 12 May, Tomos Parry will welcome chef Y.S Peng of Hunan, one of London's most revered Chinese restaurants, to cook alongside him at his Michelin-starred Shoreditch restaurant, Brat

Located on Pimlico Road, Hunan has developed a cult-like status on London's dining scene since opening in 1982. This collaboration will see chef Peng venture out of the Pimlico restaurant for the first time. Stepping into Brat's open-fire kitchen, Peng will revisit some of his career-defining dishes from the past 43 years. 

A master of Chinese cuisine

Now aged 80, chef Peng remains a pioneer of Chinese cuisine. He established the now-famous 'Leave It To Us' menu, which has become a benchmark for innovation and creativity, placing diners in the hands of the kitchen to be presented with a unique 12–18-course dining menu, tailored to their personal tastes. 

Chef Peng will work alongside Parry and the team to create a menu using spring produce and traditional Chinese cooking techniques, along with Brat's open-fire approach. It will include Hunan dishes such as scallion and wild garlic pancake with pickled white cabbage, char siu pork, gai lan with garlic and shallot oil, wood-fired rice and mango soup with sago and pomelo. 

"Hunan is a stalwart in the London dining scene and I've had so many incredible meals there, so to be able to collaborate with chef Peng is a real honour," says Parry. "The past couple of weeks we've been working alongside chef Peng have been so fascinating and rewarding and I'm excited to be able to welcome our guests to enjoy this incredibly unique menu."
