Galvin brothers join Glyndebourne
Chris and Jeff Galvin have been confirmed as new executive chefs of Glyndebourne’s fine dining restaurant Middle & Over Wallop, where they will hold tenancy for the next three years.
RA Venues announced the news, as the brothers join the operatic venue ahead of Festival 2021.
The brothers have designed three seasonally changing menus, featuring some of their signature dishes from their Michelin-starred London restaurant Galvin La Chapelle.
Highlights include starters of cured Loch Duart salmon with fennel salad, avocado and pink grapefruit; mains of roast Sussex fillet and slow-cooked rib of beef, truffle mash and rainbow chard; plus crab lasagne with beurre nantais.
Desserts include apple tarte tatin with crème normande and hot valrhona chocolate fondant with raspberry coulis.
“Our menus at Glyndebourne will be a very authentic reflection of our cooking, created using only the finest seasonal, local ingredients," the Galvin brothers said.
"Our highlights include a deliciously refreshing soup created from very ripe charentais melon, which in the summer was hugely popular with our regular guests in London.
"The apple tarte tatin, which has been a signature dish at Galvin restaurants for over 15 years, is set to be a crowd pleaser too.”
Also new for the season, Nether Wallop will transform into a flexible dining concept, offering plant-based dishes that can be interchanged with classics such as potato gratin and grains alongside lamb shank and roasted free-range chicken.
A central display kitchen will showcase chefs preparing a wide selection of dishes in a communal dining space filled with sharing tables. A traditional picnic and afternoon tea menu will also be on offer that can be enjoyed in the Glyndebourne gardens.
