Flat Iron prepares for Wagyu beef giveaway

To celebrate the launch of The Cut – a new restaurant in Waterloo from the team behind London steak restaurant Flat Iron – on 27 April, the brand is preparing to host a Wagyu steak giveaway.
Direct from Kyoto, head of beef Fred Smith has sourced some of the best Japanese black Wagyu beef for the prize.
Smith will showcase two types of Wagyu: A5 Kiyoto Miyabi and A4 Juku. This is the very first time either products have been served in Britain.
Both the Miyabi and the Juku are from Japanese black cattle, with the Miyabi boasting a marbling score of 11. The Juku is from breeding cows who have been put back out to pasture to create heavily marbled beef with a rich umami flavour.
Smith comments: "About three years ago, I tasted Miyabi Kyoto Wagyu for the first time and it was the most extraordinary Wagyu I'd ever tried. I've made it our mission to be able to source, serve and share this beef with Flat Iron fans ever since!"
Following the giveaway, the Waterloo restaurant will centre on simplicity, offering a short but considered menu championing the signature Flat Iron steak, taken from the feather blade, alongside classic Flat Iron sides such as beef dripping chips, creamed spinach and roasted cauliflower with parsley, lemon and mint. A rotating menu of beef specials will also be available, including the Herd Burger made with beef sourced from Flat Iron's own herd in Thirsk, Yorkshire.
Flat Iron's The Cut Waterloo will open on 27 April with the Wagyu beef giveaway from 6pm, available on a first come first served basis until the steaks run out.
