Pho to launch second Edinburgh location

A Vietnamese street food brand is preparing to launch its latest location in the Scottish capital later this month. 

The upcoming restaurant will be Pho's third branch in Scotland, following the success of its first Scottish venue in Edinburgh's St. James's Quarter, and the central Glasgow site on Renfield Street, which opened earlier this year. 

Founded by husband-and-wife team Stephen and Juliette Wall, Pho is known for its menu of Vietnamese street food – including its namesake aromatic rice noodle soups. 

Set in the former Wildwood venue on Lothian Road, Pho's latest outpost will accommodate 100 covers. It will offer the brand's menu favourites such as summer rolls, savoury and spicy curries, wok-fried noodles and, of course, a variety of pho – including the classic beef brisket noodle soup in 12-hour bone broth, the 'supergreen' soup and the hot and spicy prawn noodle soup. 

As Vietnam's national dish, pho is known for its balance of 12-hour broths, lean meats, fresh herbs, and spices. Pho's menu draws on the rich flavours and history of Vietnamese cuisine, with dishes made fresh every day. 

Libby Andrews, marketing director for the group, says of the upcoming launch: "With such an incredible response to our first Edinburgh location, we're thrilled to be opening a second restaurant in the Scottish capital, welcoming more guests to enjoy our warming soups just as 'Pho Season' begins."
