EVE to host Proper Slice BYGB pop-up

The team behind superstar rapper Jay-Z's favourite pizza spot is bringing a slice of the Big Apple to Kensington next month.

Lucali's Proper Slice BYGB concept lands at Ember Locke's restaurant EVE from 1 August to 2 September.

Proper Slice BYGB is the latest venture from Gibran Baydoun, the hospitality guru who brought Lucali BYGB to Singapore. The concept is all about celebrating New York's old-school pizzerias, with pizzas available as a quick grab-and-go option or as full pies ordered for a dine-in experience. 

The kitchen is led by executive chef Ariana Flores, who trained under Mark Lacono of Lucali in Brooklyn.

The menu

Guests can expect a handful of stand-out pizzas on the menu, all made with fresh dough that has been fermented for 48 hours. Options include the New York with spicy vodka tomato sauce, mozzarella, salami, stracciatella and basil; the Mafioso with spicy meatball marinara, mozzarella, chillies and red onion; and the Giardiniera with mozzarella, peppers, artichokes, olives, jalapeños and onions.

However, it isn't all just pizza – Proper Slice BYGB also offers garlic knots with marinara sauce, buffalo chicken wings with ranch dressing, a signature Caesar salad and spicy vodka rigatoni pasta.
